We are now looking for qualified candidate to fulfill the position below:
តួនាទីនិងការទទួលខុសត្រូវ
- Lead all meat preparation activities: cutting, deboning, trimming, portioning, and ensuring consistency across beef, lamb, pork, and specialty items.
- Manage B2B and B2C cutting standards, including custom chef specifications and retail display requirements.
- Oversee quality control for freshness, temperature discipline, hygiene, and HACCP-aligned practices.
- Supervise value-added production (sausages, patties, marinated items) and ensure recipe and batch consistency.
- Coordinate daily production planning, yields, wastage tracking, and documentation with the operations team.
- Ensure accurate inventory management across chillers, freezers, and retail stock, escalating discrepancies.
- Maintain safety, sanitation, and proper use of knives, slicers, grinders, and all cutting equipment.
- Support customer-facing needs for special orders, B2B timelines, and retail replenishment.
- Lead, train, and mentor junior butchers to maintain discipline, efficiency, and high standards in the cutting room.
- Work closely with the Production Supervisor, Warehouse, and Sales teams to ensure smooth operational flow
តំរូវការការងារ
Languages:
- Khmer
- English - Basic is preferred
- Proven experience in meat cutting operations — butcher shops, meat distribution, supermarket meat counters, or hotel/restaurant kitchens.
- Strong technical skills in cutting, trimming, deboning, and portioning across multiple proteins.
- Solid understanding of meat quality, grading, yield control, and cut specifications for both B2B and retail.
- Familiarity with food safety standards, HACCP practices, and strict hygiene discipline.
- Ability to work efficiently in chilled and cold-room environments.
- Physically fit and able to handle loads of 25–30kg.
- Comfortable interacting with chefs, B2B clients, and internal teams.
- Reliable communication skills in Khmer; basic English is an advantage.
